Tex Mex Beef

1 roast (rump or large chuck)
1 cup mango salsa
1 cup regular salsa
1/2 brown sugar

Cook on low 5-6 hours, shred and server in burritos or salad, cafe rio style!

Spicy Orange Beef

2 tablespoons vegetable oil
1 pound round steak, cut into thin strips on the diagonal
1/4 cup orange peel, cut into slivers
1 clove garlic, minced
1/2 teaspoon ground ginger
2 tablespoons cornstarch1 cup beef broth
1/4 cup soy sauce
1/4 cup sherry
1/4 cup orange marmalade
1/2 teaspoon crushed red pepper flakes

In a wok or skillet, heat oil over medium-high heat. Add beef strips 1/3 at a time. Stir-fry for 3 minutes or until browned, removing the done pieces to a plate lined with paper towels.
Return all the beef to the wok. Stir in orange peel, garlic, and ginger; stir-fry 1 minute.
In a medium bowl, combine cornstarch, broth, soy sauce, sherry, marmalade, and red pepper. Pour this mixture into the beef, stirring constantly. Bring to a boil over medium heat and cook for 1 minute. Serve hot.

Steak House Seasoning

2 teaspoons brown sugar
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon fresh coarse ground black pepper
4 (6 ounce) beef steaks
1 tablespoon vegetable oil

Preheat grill to medium-high heat.
Mix brown sugar and seasonings.
Brush steaks with oil (or save time and use the olive oil spray). Sprinkle seasoning mixture evenly over both sides of steaks; press gently into steaks to secure.

Crock Pot Roast

1 packet of brown gravy mix
1 packet of ranch dressing mix
1 packet of Italian dressing mix

Place roast in crockpot. Mix ingredients together in a separate bowl, sprinkle over roast. Add 1 cup of water to crockpot. Cook 7-10 hours.
Can add vegetables if desired.

Taco Soup

1 can kidney beans, drained
1 can stewed tomatoes-not drained
1 can tomato soup
1 can veg. soup
1 can whole kernel corn, drained
1 can water, rinsing out a can
2 T. chili power, or to your liking
2 T. taco seasoning
1 lb. hamburger
3/4 cup salsa
Onion

Brown hamburger and onions. Add to remaining ingredients. Serve over tortilla chips, top with sour cream and grated cheese.

Beef Stroganoff

1 lb. ground beef or sliced steak
1/4 cup chopped white onion
1/2 tsp. garlic salt
2 Tbsp. all purpose flour
1 can beef broth
1 tsp. ground mustard
1/2 tsp. salt
1 tsp. pepper
1 cup sour cream (add more to taste)
wide egg noodles

In a large pot, boil water. Add egg noodles and salt. Cook till tender. In a large skillet brown ground beef . Add onion, garlic salt, salt and pepper. When onions are tender add flour to pan and mix till coated. Add beef broth and dry mustard. Let simmer about 5 min. until flour has cooked. Add sour cream and heat through. Server over noodles. (You can add fresh or canned mushrooms if you like... you won't find any of that at our house) ;)
